How to use leftover tacos | Taco Tuesday Season Finale
I thought for a while about to do for this taco tuesday finale, and initially, I was thinking about one elaborate taco, but then I thought about one of the other missions of this channel besides making great food, which is to give you useful tips and techniques to use in the kitchen. So today, we are learning how to untaco a taco.
ADOBO GARBANZO BEAN CHILAQUILES
Ingredients:
Leftover adobo garbanzo filling from this video:
16 oz crushed tomatoes
2 tortillas
Spicy Roasted Corn Salsa from this video
Sour Cream
Lime Juice
Optional toppings: cilantro, pickled onions, fried egg
Method:
In a saucepan over medium-low heat, mix the the crushed tomatoes and the leftover garbanzo filling. Let the mixture simmer for 5 minutes. TASTE IT. Adjust salt and pepper as needed.
Spritz the tortillas with water, wrap them in a towel and microwave for 30 seconds. Slice the tortillas into strips and broil until crispy (keep an eye on them so they don't burn)
Meanwhile, mix the roasted corn salsa, sour cream, and lime juice until smooth and almost pour-able.
Add the tortillas to a plate, pour over the tomato mixture, and top with the salsa sour cream.
Add additional toppings like cilantro, pickled onions, and a fried egg.
SMOKED CHICKEN CHOPPED SALAD TACO
Ingredients:
Leftover chicken from this video
Pickled onions
1/2 tomato
1 radish
1/2 carrot
1/4 cucumber
1/2 head of romaine lettuce
Tortilla chips
Salsa Vinaigrette:
1 TBSP Spicy Roasted Corn salsa from this video:
2 TBSP olive oil
1 TBSP lime juice
Method:
Thinly slice the tomato, radish, carrot, and cucumber into rounds.
Add the pickled onions to the vegetables and roughly chop them all to a small size. Add them to a big ass bowl
Chop up the leftover chicken and add it to the bowl
Chop up the romaine and add it to the bowl. Sprinkle in some salt and pepper and lightly toss.
Drizzle over the dressing and sprinkle on tortilla chips.
Notes:
- Another great portable alternative is to put the salad into a wrap.
