Fermented Cranberry + Walnut Vinaigrette

Ingredients:

  • 35 g leftover lacto cranberry liquid

  • 2 grams salt

  • 105 g neutral oil

  • 20 g walnuts, toasted & finely chopped

  • Fresh ground pepper

  • Fresh chopped herbs (optional)

Method:

  1. Toast and finely chop the walnuts.

  2. Combine the salt and lacto cranberry liquid in a bowl. Mix to dissolve.

  3. Drizzle in the oils while whisking to form an emulsion. It is done when the emulsion leaves a layer on the back of a spoon

  4. Add in the walnuts (and herbs if using).

  5. Drizzle over greens and enjoy.
