Fermented Cranberry + Walnut Vinaigrette
Ingredients:
35 g leftover lacto cranberry liquid
2 grams salt
105 g neutral oil
20 g walnuts, toasted & finely chopped
Fresh ground pepper
Fresh chopped herbs (optional)
Method:
Toast and finely chop the walnuts.
Combine the salt and lacto cranberry liquid in a bowl. Mix to dissolve.
Drizzle in the oils while whisking to form an emulsion. It is done when the emulsion leaves a layer on the back of a spoon
Add in the walnuts (and herbs if using).
Drizzle over greens and enjoy.
