Chicken Shishito Stir Fry

Stir Fry Blueprint:
1 - Learn a Seasoning Technique
Stir Fry Sauce
Choose a flavor. Example: Lemongrass + Ginger Sauce
Then put it together in these steps:
Saute aromatics of choice
Add flavorings (Soy Sauce, Hoisin, Sriracha, Black Vinegar)
Simmer for 8-10 mins.
Strain into a squirt bottle
Use on protein + veggies
2 - Apply it to a Lean Protein & Veggies

3 - Serve it in a Form Factor

4 - Add Condiments + Toppings

Ingredients
Sauce Components
10 g (2 tsp) neutral oil
50 g (~1/2 cup) lemongrass, roughly chopped
30 g (~1/4 cup) ginger, thinly sliced
100 g (~1/2 cup) hoisin sauce
100 g (~1/2 cup) Chinese black vinegar
30 g (~1/4 cup) soy sauce
Stir Fry Components
200 g (~1/3 lb) shishito peppers, de-stemmed and chopped in half diagonally
1 large (225-450 g, or 0.5-1 lb) chicken breast, thinly sliced into strips about the size of the prepped pepper pieces
1 large garlic clove, thinly sliced
14 g (1/2 tbsp) neutral oil
Kosher salt
Serve With
Rice of choice for serving, cooked
Chili crisp or another condiment of choice
Sesame seeds
Instructions
Prepare the sauce: Set a pan over medium heat and add 10 grams of oil.
Once hot, toss in the ginger and lemon grass and let this saute for about 2 minutes to infuse.
Once very fragrant, add hoisin sauce, black vinegar, and soy sauce.
Let this mixture simmer for 7-10 minutes until it thickens slightly.
Lastly, set a strainer over a jar and pour in the sauce. You could keep the ginger and lemongrass in if you want, but it will store longer in the fridge without them and we already infused a ton of those fresh flavors into the sauce. This will make extra.
Stir-fry & add sauce: Add a sprinkle of salt to the sliced chicken. Set a wok over high heat and add 7 grams of oil. Once ripping hot, add the salted chicken let cook for 3-4 minutes.
Once cooked, add 7 more grams of oil and toss in the sliced garlic as well as the peppers. Stir fry everything for 4 to 6 more minutes until some browning is developed. Turn off the heat.
Lastly, let’s add the stir fry sauce to taste and combine until well coated. 15 grams should be plenty to make it flavorful but you can add more if you would like.
Serve: Add a 1/2 cup of cooked rice to a bowl, then add the stir fry followed by a sprinkle of sesame seeds and the chili crisp for a touch of spice.
