Crispy Garlic-Rosemary Pasta (with any braised meat)
If you have some braised meat around, you can level up your weeknight pasta with this technique.
Ingredients
Crispy Meat Topping
Braised Meat
Fresh rosemary, minced
Clove of garlic, minced
Cooking oil
Pasta Components
Spaghetti, cooked to package directions
Marinara (or make the best three-ingredient tomato sauce)
Parmigiano Reggiano
Instructions
Crisp the beef: Set a pan over medium heat with a little squirt of oil. Toss in the garlic and rosemary to toast for 30 seconds before adding the beef. Mix the two together, and then I just spread the beef into a thin layer to let the fat render and fully crisp it. Set aside.
Sauce your pasta: Take your cooked pasta and integrate with your sauce in a pan until everything is warm and well coated.
Plate & serve: Add a serving of pasta to a plate, then top with an extra spoonful of sauce from the pan, and finish with a generous layer of crispy garlic rosemary braised meat and grated Parmigiano Reggiano over top.
