Prep the grilled chicken and Algerian sauce (recipes below).
Dice the tomato, thinly the lettuce, and grate the cheese.
Remove the fries from the oven once crisp.
To assemble, place the flour tortilla down. Add a layer of Algerian sauce and the grilled chicken. Drizzle more sauce over the top. Add the french fries, pickled onions, tomato, lettuce, and cheese. Wrap as best you can and devour!
Rosemary Garlic Chicken
Using a knife thin out the thick side of the chicken breast. Sprinkle salt on both sides. (Optional) Place on a plate in the fridge overnight.
Using a paper towel, dry the exterior of the chicken. Grate the garlic and sprinkle the rosemary over the chicken. Pour a little oil over the chicken and rub in the garlic and rosemary.
Add enough oil to the pan to shallow fry the chicken, and set over medium heat (350-375 F)
Once the oil is hot, gently lay the chicken down. Fry on both sides until the crust is golden brown and the internal temp reaches at least 155 F (68 C). Slice and enjoy.
Algerian Sauce
Place a bowl over a scale. Add all the components and mix them together. Adjust the salt, acid, and spice levels as needed.
